Chocolate Cupcakes with Cream Cheese Frosting | Cupcake and Cookie

 
It was raining today. Here is one of my favourite recipes! The first time I made these, I burnt them. With a little bit of practice, I'd say I'd improved! Cupcake will be very excited because this is our first cupcake recipe on our blog!
 
You will need...
 
100g Self Raising Flour
100g Butter
100g Caster Sugar
2 Eggs
15g Cocoa Powder
1 tbsp Milk
150g White Chocolate
140g Cream Cheese
Milk Chocolate Curls, To Decorate
 
Method
 
1. Preheat the oven to 180'C.
2. Mix the butter and sugar until light and fluffy.
3. Gradually add the eggs, flour and cocoa powder.
4. Add the milk.
5. Put the mixture into the paper cases.
6. Leave the cakes in the oven for 20 minutes.
7. Leave them to cool for as long as they need.
8. Melt your white chocolate.
9. Mix your cream cheese and white chocolate together.
10. Pipe your icing onto your cupcakes.
11. Sprinkle your chocolate curls over them.
12. Enjoy!

Baking Haul! | Cupcake and Cookie

 
I went on a little haul. Oops! I have been baking for a while but it is only recently that I have really got into it. You don't need a lot of fancy tools to bake but I want to start doing some more difficult recipes so I thought I would buy a few things to help me out.

Pizza Cake | Cupcake and Cookie

So if you are following us on twitter, you will know that Cupcake recently got back from holiday in America! So we thought we'd do a celebratory blog post! We are both big fans of Rosanna Pansino (if you don't know who she is, go and watch her now!!!) and we recently watched her video on how to make a pizza cake. It obviously didn't go as well as hers but we tried. (Just to let you know, we are not taking credit for this recipe and it is not exactly the same as Rosanna's so if you want a better demonstration then go and check out her latest video!).
 
You will need...
 
A plain cake from a recipe of your choice
Yellow fondant
Red fondant
Liquorice
Galaxy Bites
White Chocolate Bar
 
Method
 
1. Level your cake
2. Role out your fondant
3. Cover your cake in yellow fondant
4. Cut out a circle shape in your red fondant
5. Put your red fondant on top of your cake
6. Grate your white chocolate
7. Sprinkle your grated white chocolate over your red fondant
8. Add your toppings
9. Add a crust with your remaining yellow fondant (optional)
10. Enjoy!

Pinata Cake! | Cupcake and Cookie

 
Today is election day which means, I get a day off! I thought I would use this time to make a...Piñata Cake!!!! If you don't know what that is, you are about to find out! Enjoy!
 
 
You will need...
 
 
360g Sweets (Skittles, Smarties, etc.)
1 tbsp Vanilla Extract
4 x Food Colouring
460g Self Raising Flour
900g Icing Sugar
460g Caster Sugar
8 Eggs
460g Butter & 450g Butter for Icing
 
Method
 
1. Preheat the oven to 180'C
2. Prepare 4 baking tins
3. Mix the sugar and butter until light and fluffy
4. Add vanilla extract
5. Mix in the eggs bit by bit
6. Sift in the flour
7. Separate the mixture into 4 bowels
8. Add food colouring
9. Put the different mixtures into each baking tin
10. Put the tins in the oven
11. Leave in for 25 minutes
12. Stir the butter and icing sugar
13. Separate the icing sugar into 4 bowels and add the food colouring
14. Keep some plain icing sugar left over
15. Take the cakes out the oven and allow to cool
16. Once the cakes have cooled, even them out
17. Cut holes in 2 of the cakes
18. Put left over icing in between the cakes
19. Put the sweets in the middle of the cake
20. Put coloured icing sugar into piping bags
21. Pipe icing around each layer and smooth with a knife
22. Enjoy!

Chewy Flapjack Cupcakes | Cupcake and Cookie

I had quite a good day today so I thought I would do a fun recipe for you. I was looking through my favourite cupcake recipe book  and I found this cool recipe! Enjoy!
 
You will need... 

Cupcakes 

83g Butter
83g Sugar
1 Egg
83g Self-Raising Flour

Flapjacks

60g Butter
60g Sugar
1 tbsp Golden Syrup
83g Oats


Method

Flapjack Mixture

1. Put the Butter, Sugar and Golden Syrup into a small saucepan
2. Heat gently until everything has melted
3. Take off the heat and stir in oats

Cupcake Mixture

1. Preheat the oven to 190'C
2. Put 12 cupcake cases into a cupcake tray
3. Mix the butter and sugar until light and fluffy
4. Gradually stir in the egg
5. Sift in the flour and stir gently
6. Spoon the mixture into the paper cases
7. Gently spoon the flapjack mixture over the top
8. Enjoy!

Welcome to the World of Cupcake and Cookie! | Cupcake and Cookie

Welcome to Cupcake and Cookie! Where we share our yummy recipes for you to try at home! We thought we'd kick things off with some youtuber cookies! These are the cookies that Zoella, Tanya Burr and Anna Sacconejoly made recently. Here is our attempt at making them...
 
You will need...
 
200g Butter
1 Egg
75g Cocoa Powder
300g Caster Sugar
275g Self Raising Flour
Milk & White Chocolate
 
Method
 
1. Preheat the oven to 200'C
2. Prepare two baking trays with greaseproof paper
3. Mix the butter and sugar until creamy and smooth
4. Mix in the egg
5. Add the flour
6. Mix in the cocoa powder
7. Break up the chocolate and add it to the mixture
8. Separate the mixture and put it on to the baking trays
9. We're not sure how long they are supposed to be put in the oven for but we ended up keeping them in for 20-30 minutes.
10. Leave them to cool and enjoy!
